Baked Blueberry Oatmeal Recipe

I don’t know very many people who are absolutely crazy about microwaveable, prepackaged oatmeal. And yet, it continues to be a go-to breakfast choice in our house. Mostly for the fact that it’s filling, quick to make, and cheap to buy.

When I stumbled upon someone talking about just how easy it is to make your own yummy oatmeal that’s actually baked, and without all the yucky preservatives, I was definitely interested. And what better time to experiment when I had an entire carton of yummy blueberries on hand!

Craig and I definitely considered this simple recipe a win! Not only was it incredibly easy to make and yummy to eat, but it also became breakfast for the entire week. Every morning, just spoon yourself some, nuke it in the microwave for 30 seconds, and you’re good to go!

Baked Blueberry Oatmeal Recipe

Ingredients You’ll Need:
  • 1 cup steel cut oats
  • 1/2 tsp. baking soda
  • 3/4 tsp. ground cinnamon
  • Pinch of salt
  • 1 cup milk
  • 1 large egg – beaten
  • 1/4 cup maple syrup
  • 2 tbsp. unsalted butter – melted
  • 1 tsp. vanilla extract
  • 2 large ripe bananas – peeled and sliced
  • 1 cup blueberries (can also substitute your choice of berry)
  • *Optional – 1/4 cup chopped walnuts
  1. Preheat your oven to 375 degrees.
  2. Grease a 9-inch round cake pan and set aside.
  3. In a medium bowl, combine the oats, baking powder, cinnamon, salt, and walnuts. Stir together.
  4. In another bowl, combine the syrup, milk, egg, butter, and vanilla.
  5. Spread sliced banana pieces in a single layer over the bottom of the cake pan. Top with half of the berries.
  6. Evenly sprinkle the dry oat mixture over the fruit, and pour the liquid ingredients over the oats.
  7. Sprinkle the last of the nuts and berries over the top. Bake for 35-40 minutes, or until the oats are set and are starting to brown. Let cool 10 minutes before serving.

  • Something you might not know about me...
I share a ton about my health and wellness journey, but I also am a HUGE home decor lover!
I’m obsessed with pinning gorgeous homes, browsing the aisles of Home Goods, and tweaking the decor in my home!
Now it’s your turn — what’s one thing Instagram might not know about you? 💖
  • Comparison can straight up wreck you 🙅🏻‍♀️
But what if you focused your energy on pursuing your PURPOSE instead? 💗
Well, friend — I have a feeling it might just change everything ✨
  • Bear has the right idea, because I’m crawling into bed tonight like 💤🐱✌🏻
I am straight up EXHAUSTED, y’all.
It was an insanely long day celebrating and learning and sweating with my girls at today’s coaching event. And then my afternoon and evening were spent getting clients set up for our Fit Club that kicks off the week. But you know what’s amazing? 😴
I might be exhausted but man my heart is filled to the brim. With gratitude, excitement, and dreams for what’s yet to come. 💗
After a good night’s sleep, I’m comin’ after ya, 2019! ✨
  • Want in on a secret? 🗣👀
The sweaty selfies I share might seem glamorous and those endorphins after burning a few hundred calories are no joke — but the truth? Working out is freaking HARD. 💦😱
I’ve been doing this jam almost daily for the past year — and it’s still just as hard as the day I started.
“Wait, but isn’t it supposed to get easier?!” — Probably you right now ⁉️
You might have heard that, but THIS hard that I’m talking about is different. ✨
I can push myself + overcome challenges BECAUSE it’s hard. It’s cliche, sure, but the saying is still true — if it were easy, everyone would do it. 🙌
Tag a friend who NEEDED to hear that they’re strong enough to do HARD THINGS in the comments — let’s share the encouragement, yo! 💪💕✨
It’s okay to take pride in your appearance.
It’s okay to want to lose weight.
It’s okay to want to pass on the donuts in the break room.
It’s okay to want to build muscle and look lean.
It’s okay to want to change the way you look.
It’s okay to want to put your health first.
For so long, I hid behind my overweight frame and “embraced it” in the name of “self love” — but the reality? I was freaking MISERABLE.
Self love isn’t just looking in the mirror and loving your rolls and stretch marks (though I’m proud to bear my tiger stripes as reminders of my journey)...
Self love is loving yourself enough to put your health first, and loving yourself for being strong enough to make that tough decision.
So if you want to lose weight, gain weight, tone up, or lean down — I’ll be your BIGGEST CHEERLEADER.
Because no matter where you are or where you’re going, you’re beautiful and deserve to be your best self ❤️
